Jayson Lusk is a food and agricultural economist who studies what we eat and why we eat it. Lusk currently serves as Regents Professor and Willard Sparks Endowed Chair in the Department of Agricultural Economics at Oklahoma State University and as the Samuel Roberts Noble Distinguished Fellow at the Oklahoma Council of Public Affairs.  His books include: Unnaturally Delicious, The Food Police, and Compassion by the Pound.
